Credit where it's due — I found this one on @sarahebaus, and it lived up to the hype. The only thing I changed was swapping in gluten-free gnocchi, since that's how I've had to eat for over ten years now.

I am always a little suspicious of anything that calls itself a '3 ingredient' recipe, because usually there's a hidden fourth and fifth ingredient hiding in the seasoning cabinet. This one actually holds up. Gnocchi, cherry tomatoes, marinated mozzarella pearls, into a dish, into the oven, done.

The trick that makes this whole thing work is using the marinated mozzarella — the kind that comes packed in oil with herbs already in it. You dump that oil right over the gnocchi and tomatoes before they bake, so it's doing double duty as your seasoning and your fat. That's the whole secret and I'm not sorry it's this easy.

I made a double batch of this alongside grilled steak, and it disappeared just as fast as the meat did. It's gluten-free automatically as long as you grab a GF gnocchi bag off the shelf — I use Tuscanini, since it's easy to find and doesn't fall apart in the oven.

The Recipe

Method

  1. Preheat the oven to 450°F.

  2. Spread the gnocchi and cherry tomatoes out in a baking dish.

  3. Pour the oil from the marinated mozzarella container right over the top and toss until everything's coated. Season with a little kosher salt.

  4. Bake for 15 minutes.

  5. Pull the dish out, scatter the mozzarella pearls evenly over the top, and slide it back in for another few minutes, just until the cheese softens and gets glossy.

  6. Serve it right out of the dish while it's hot.
