I make a different salad basically every day for lunch, and it's never really a recipe so much as whatever's sitting in my fridge that needs to get used up. This is the crab version, and honestly it's one of my favorites. It comes together in the time it takes me to run my little veggie chopper over everything, and cleanup is basically nothing.

Let's be honest about the crab situation up front: this is imitation crab. The individually wrapped sticks from the seafood case, not lump crab meat. I'm not trying to fool anybody: it's affordable, it's already cooked, and it dices up beautifully in this salad. If you want to use real crab meat instead, go for it, it'll just cost you a lot more for lunch.

The real trick here is that green-handled veggie chopper I'm obsessed with. Lettuce, onion, cucumber, tomato, crab sticks: everything goes in whole-ish and comes out diced in about two seconds, straight into the container you're going to eat out of. Toss it with a little mayo and seasoning and you're done.

The Recipe

Method

  1. Run the romaine heart through a veggie chopper (or dice it small by hand) straight into a large container.

  2. Chop the onion and add it in, followed by the cucumber and the tomato, diced the same way.

  3. Unwrap the imitation crab sticks and chop them too, adding them right on top of the veggies.

  4. Squeeze in the mayonnaise and sprinkle on the seasoned salt.

  5. Drizzle with olive oil and a splash of apple cider vinegar.

  6. Stir it all together until everything's coated, taste, and adjust the seasoning if it needs more. Eat straight out of the container (no shame).
