I use a gluten-free baking mix instead of Bisquick since I've been gluten-free for over ten years now, and honestly you cannot tell the difference. Mild breakfast sausage, a good pile of shredded cheddar, the baking mix, and a splash of milk to bring it together — that's it, that's the whole ingredient list.
Roll them into balls, bake, and freeze whatever you're not eating that day. They reheat like a dream, which makes them the easiest breakfast you'll pack for a trip or just a busy week at home.
