Living on the Gulf Coast will turn you into a jambalaya person real quick. This is the big-batch version I make when I actually want leftovers — it feeds eight to ten people, and honestly it's better on day two once everything's had time to sit and get friendly. I originally made this batch to freeze-dry for meal prep, but there's nothing stopping you from just eating it straight out of the pot like a normal person.

Two things I do that aren't strictly by the book: I cook my rice in chicken broth instead of water because why would you pass up free flavor, and I leave the ham out. The recipe says a pound of ham is optional and I'm here to tell you it is very optional — I don't like it, so it never goes in mine. Do your thing.

It's not a fast recipe, but almost none of it is hands-on. You boil and shred the chicken, cook the rice, brown the sausage, and let the vegetables cook down while you do something else. Then it all goes in one pot.

The Recipe

Method

  1. Cover the chicken breast with water in a large pot. Add one onion (halved), a stalk of celery, and 3 of the garlic cloves. Boil until the chicken is cooked through and tender, then pull it out and shred it. Hang on to that broth — it's what you'll cook the rice in.

  2. Cook 2 cups of converted rice according to the package. I use the reserved chicken broth instead of water for more flavor.

  3. In a large pot or Dutch oven, fry the smoked sausage for 3–5 minutes until it's lightly browned, then take it out and set it aside.

  4. In that same pot, add the diced onion, chopped bell pepper, chopped celery, and the butter. Cook it all down until the vegetables are tender.

  5. Stir in the parsley, thyme, and the whole can of tomato paste.

  6. Add the shredded chicken and the browned sausage back in and stir. Season with the bay leaves, salt, pepper, and Tabasco to taste.

  7. Add the rice and stir until everything is completely incorporated. Let it cook another 15 minutes, fish out the bay leaves, and serve.
